Is there a way to create Append and Make Table queries from existing Select queries by "save as" or "copy" so I don't have to start from scratch.

Yes. It's easy.
Decide whether you want to change your present query or make a copy of your present query before you change it.
Open your query in design mode. Right click in the top grey area next to your table/query list. One of the options is Query Type. Highlight that and it will give you all the query types to select from. Select the type you want and save your query.
I used this option in my longshots chart. At first I had a select query. I changed it to a make table query. After making the table I changed it to an append query.
